You need to ensure you have procedures in place for regular waste collection. Regular collections need to be in place to ensure waste does not build up, and you must make sure there are suitably sized containers to store the waste in before collection.  An unmanaged build-up of waste can attract pests and cause unpleasant odours.

The Food Standards Agency has a useful page for businesses on Food and cooking oil waste.

Using a private contractor to manage your waste is an option. Bath and North East Somerset Council also offer waste collection and recycling services for businesses. More information on this serve can be found here.

Disposal of waste oil

Any waste oil from your food business needs to be disposed of safely. Waste oil must not be disposed by pouring it down the drain or into any drainage system. This practice can lead to blocked drains, and provides a potential food source for pests. Ensure that any waste oil bottles kept outside are lidded and sealed.

Some businesses will install a Grease Trap system to prevent any fats or oils from entering the drainage system – these can be appropriate if you are preparing or handling greasier foodstuffs on a regular basis.

Water UK have produced a guide on the disposal of fats, oils, grease and food waste for food businesses and other catering outlets.
